Black Beans and Basil Salad

Organic Raw Dry Black Beans in a Spoon
I made this dish for a cooking class and everyone loved it.
The basil tastes of Summer and adds a wonderful pop of flavor to this salad. It’s a great way to add kale into a dish too! Perfect for picnics, pot lucks, and everyday lunches and dinners.
Black Beans and Basil Salad
Chef’s Notes: If your beans contain salt, rinse them well and wait to add salt until all ingredients are mixed. Taste and add more if desired.
Ingredients
2  15 ounce cans cooked black beans, preferably low salt
2 cups kale- stems removed, leaves chopped fine.
1/2 Cup packed, finely chopped fresh basil leaves, hard stems removed
4 scallions, sliced fine
1/4 teaspoon salt
1/4 Cup olive oil
Method
Prepare all ingredients, rinsing and draining beans, slicing vegetables.
Combine all ingredients in a large mixing bowl.
Taste and adjust salt if desired.
