Celebration Quinoa Salad

This is a great dish to make all year round.
It’s light yet filling, and the crunch of the apple with the dried cherries make this a flavorful surprise. Celebration Quinoa salad is a great way to get lots of great veggies into your life. Add in any crunchy veggies you enjoy and swap out any of the ingredients you don’t have on hand for others that you do. The ground turmeric adds anti inflammatory and immune supporting goodness.
Measurements can shift according to your preference. Red, orange or yellow peppers are delicious but keep them on the side if you are saving some for leftovers because they can get slimy. Add and mix in before eating.

Ingredients
2 Cups white, red or black quinoa
4 Cups vegetable or chicken stock
2 pinches fine grain sea salt

6 scallions, roots removed, finely chopped white and green parts
1 bunch cilantro leaves, chopped fine
1 bunch flat parsley, chopped fine
3 carrots, sliced about ¼ inch thick, or 1 cup grated
2 ribs celery, sliced
1/3 Cup walnuts or pecans, roughly chopped
¼ Cup unsweetened dried cherries or apple juice sweetened dried cranberries
2 crisp apples of choice, chopped
1 teaspoon ground turmeric
1/4 Cup extra virgin olive oil
1 1/2 lemons, zested and juiced
1/2 teaspoon fine grain sea salt to taste
Method
Prepare vegetables while quinoa is cooking.
Rinse quinoa in a fine mesh strainer, then combine with water and salt and bring to the boil, cover, lower to simmer, until all water is absorbed- about 25 minutes. Don’t stir!
Off heat, then keep covered.
In a small bowl, combine olive oil, lemon, zest, turmeric and whisk to mix. Set aside.
In a large bowl, add all vegetables, herbs, apples, cherries and pecans/walnuts. Fluff quinoa with a fork, then add to the bowl with the rest of the ingredients. Add salt and dressing and toss well to mix. Taste and add more salt if desired
