Simple Summer Salad
Your Weekend Summer Salad
This salad uses the fresh crunch of cucumbers, sweet tomatoes all showcasing the bounty of Summer.
It travels well and is perfect for picnics, the beach and your Summer gatherings. Enjoy!
Ingredients
3 cucumbers (about 3 Cups) chopped in quarters
2 Cups cherry tomatoes, sliced in half
½ red onion, chopped fine (about ¼ Cup)
1 15 ounce can chickpeas, rinsed and drained
1 lemon, zested and juiced
2 Tablespoons good olive oil
¼ teaspoon sea salt
Fresh ground pepper
Method
Combine all ingredients in a large bowl and toss to mix.
Variations: add your favorite fresh herbs
