Simple Winter Soup

Quick Nourishing Soup
We are having another snow day here and it’s time for soup! I kept it simple and used what I had and it really hit the spot!

Here’s the recipe 🥣
– A few leaves of kale, including the stems, chopped fine
– 5 carrots, thick slices
– 1 Japanese potato thick slices
– 2 boneless skinless chicken breast, whole
– 1 inch piece of ginger, grated
– 1 inch piece fresh turmeric, grated
– Some shiitake mushrooms that got hard in a paper bag in the fridge that I forgot about 😂
– 2 teaspoons curry powder
– 1/2 teaspoon salt, more to taste

Method
🥣 Combine everything in a large soup pot and fill with water a few inches above the ingredients

🥣 Bring to the boil and simmer 15 -20 minutes

🥣 Pull the chicken out and shred using two forks. You can also cut in cubes if you prefer. Chef’s choice!

🥣 Add chicken back and simmer another 10 minutes until potatoes are fully cooked. Taste and adjust seasonings and enjoy!
