Asian Kale Salad
1 bunch of kale (any kind), chopped fine
1 red pepper, sliced
3 scallions (green parts) or ½ red onion, chopped fine
2 Tablespoons toasted sesame oil
2 Tablespoons brown rice vinegar
2 teaspoons soy sauce
1. Put kale, pepper and onion/scallion in a large bowl and toss to mix.
2. Add dressing ingredients and toss all to mix
3. Garnish with chopped roasted almonds
