
Quick Nourishing Soup
We are having another snow day here and it’s time for soup! I kept it simple and used what I had and it really hit the spot!

Here’s the recipe
– A few leaves of kale, including the stems, chopped fine
– 5 carrots, thick slices
– 1 Japanese potato thick slices
– 2 boneless skinless chicken breast, whole
– 1 inch piece of ginger, grated
– 1 inch piece fresh turmeric, grated
– Some shiitake mushrooms that got hard in a paper bag in the fridge that I forgot about
– 2 teaspoons curry powder
– 1/2 teaspoon salt, more to taste
Method
Combine everything in a large soup pot and fill with water a few inches above the ingredients

Bring to the boil and simmer 15 -20 minutes
Pull the chicken out and shred using two forks. You can also cut in cubes if you prefer. Chef’s choice!
Add chicken back and simmer another 10 minutes until potatoes are fully cooked. Taste and adjust seasonings and enjoy!
